Finally tried a mandoline slicer after years of thinking they were overhyped
I always thought mandolines were just another gadget taking up space, but after slicing 40 pounds of potatoes for a gratin last week by hand and ruining my wrist for 2 days, I grabbed a plastic $20 one from a restaurant supply store in Austin. It sliced through all of them in under an hour with zero pain. Has anyone else held out on a tool and regretted waiting?

Dude, I was the exact same way. I had this fancy Japanese one my sister gave me sitting in the box for like two years because I figured a good knife and some patience was all you really needed. Then I agreed to help with a big batch of pickled jalapeños for a party and thought I'd just tough it out with a chef's knife. After about 10 jalapeños my fingers were burning and my hand was cramping so bad I couldn't grip the knife right. I grabbed that mandoline out of the box, set it to 1/8 inch, and finished the other 30 jalapeños in like 10 minutes without even breaking a sweat. Now I feel like an idiot for not using it sooner, those plastic restaurant supply ones are actually beasts and they're cheap enough that if you break it you don't care.
