A line cook at my old spot in Portland told me to stop plating with tweezers on every dish
She said my 3 minute pickup times were slipping because I was fussing over micro herbs nobody ordered, and she was right. How do you all decide which dishes actually earn the fancy finish?
Wow, hard disagree here because that line cook was wrong to tell you to drop the tweezers! Speed means nothing if the plate looks like everyone else's on the block, and pickups slip for a million reasons, not just garnish fussing. Micro herbs take ten seconds, so if times were tanking that bad, the problem was probably ticket flow or your line setup, not the tweezers. Honestly the dishes that earn a fancy finish are ALL of them, because that last touch is what makes people pay real money instead of going to a fast casual spot. You cave on the little stuff and next thing you know you're just another guy slinging plates with no soul.
