Watching a guy break down a whole pig at the state fair in Sedalia finally made primal cuts click for me
I've been cutting for 11 years but always worked off a rail with everything already separated, so I never really saw how the seams connect. Last month I stood at the Missouri State Fair demo tent for 40 minutes watching an old timer named Ray work a 220 lb hog with just a boning knife, and he kept saying 'follow the fat, not the bone' while the whole shoulder basically fell apart in his hands. How do you all teach new guys the primal layout if they never get to watch a whole animal come apart?
