Pro tip: skip the boning knife, go with a curved scimitar for chuck rolls

Swapped my straight boning knife for a curved scimitar at the shop on Main Street last month, and trimming chuck rolls took me from 8 minutes to under 5 with way less waste, anyone else find the angle makes that big a difference?
