Found a gem of a welding shop in Toledo last Tuesday

Stopped into a little fabrication place called Iron Horse Fab while passing through for a job, and they had this old-school technique for preheating thick plate with a rosebud torch that I hadn't seen in years. The owner showed me how he times the color change on the steel to get the perfect temp before welding, which saved me a real headache on a 2-inch flange job I've got next week. Has anyone else picked up a trick like that from just walking into a random shop?
