Quenched a blade in old motor oil and it caught fire, lesson locked in

Had a 1095 chef knife glowing perfect in my shop in Austin last Tuesday, dipped it into a bucket of used oil from my truck and the whole thing erupted like a flare, so I threw a lid on it and let it burn out, but now I'm second guessing every quench medium I've ever trusted, what do you seasoned folks use that wont turn into a fireball on day one?
