Debating pour-over ratios with a barista at a tiny shop in Portland
Called out a barista for using a 1:17 ratio and told him it was way too weak. He handed me a cup of his brew and said 'just taste it before you judge the math.' It was bright and clean, honestly better than my usual 1:15. Am I missing something about how grind size changes the ratio, or should I stick to my stubborn ways?

Have you tried adjusting your grind size instead of just changing the ratio? I used to be stuck on 1:15 too, but a buddy of mine at a local shop talked me into going finer with a 1:16 and it honestly changed how I brew. The finer grind slows the water down and pulls more flavor out, so you can use less coffee without it tasting weak. I still keep my 1:15 for darker roasts, but for light and bright beans I'm all in on the 1:16 now. Take it for a spin on your next bag, worst case you just pour another cup.
