Update: my temp probe cable got pinched in the lid during a 14 lb packer and I lost 2 hours of cook time
Was doing an overnight cook on my WSM in the driveway and didn't notice the probe wire got slammed in the lid until the alarm never went off at 165. Had to guess the stall was happening and wrapped it blind, ended up pulling at 208 instead of 203. Anyone else run a probe through a grommet instead of over the rim to keep this from happening?
The lid slamming on the probe wire is exactly what got me too. I used to just run it over the rim and swear it was fine, but after losing a whole brisket to a pinched cable I finally drilled a grommet in. Never going back, that over the rim stuff is just asking for trouble.
