Just hit 500 briskets on my old offset smoker
I was cleaning out my garage in Austin and found my old log book from when I first started. I went through and counted every single brisket I've smoked on my Franklin offset, and it was exactly 500. It hit me that I've been doing this for over a decade, every weekend, through rain and heat. That number made me think about all the small changes I've made over the years, like switching to wrapping at 165 degrees. Has anyone else tracked their cooks and been surprised by the total?

Holy crap, 500 briskets is insane! I can't even imagine the amount of wood you've gone through in a decade, that's a whole forest. Keeping a log book for that long is wild dedication, I lose track after like three cooks. The fact you stuck with it every single weekend, Texas heat and all, that's just next level.
