I've been trimming brisket fat wrong for years, and a guy at the Texas Monthly BBQ Fest finally pointed it out.

Honestly that's how most skills work, you can do something for ages without realizing there's a better way. It's like driving the same route for years and then a passenger points out a shortcut. You just get stuck in your own method and stop questioning it. The trick is being humble enough to listen when someone offers a tip, even if it means admitting you were wrong. That guy at the fest did you a solid.

Oh my gosh, YES. I did the same thing with my oven for ages, just using the regular cleaner and scrubbing forever. A friend told me to let the cleaner sit overnight and it wipes right off. Total game changer. It's so easy to just keep doing things the hard way because it's what you know. You gotta be open to those little bits of help, they save you so much time and effort.

Man, I feel that. I spent two whole years cleaning my grill grates with the scrubby side of the sponge before my neighbor saw me and nearly had a heart attack. Turns out the brush side exists for a reason. You just get so sure of your own way you stop looking for a better one. What was the actual tip he gave you for the brisket?
