My layer cake slid apart on the drive to my sister's place in Dayton
I made a 3 layer strawberry cake Saturday and didn't chill it long enough before boxing it up, so by the time I got there the whole middle layer had shifted sideways. I tried to shove a skewer through it in the parking lot and just made it worse. Do I need to chill overnight for anything with fresh fruit filling, or is there a better way to transport these?
That skewer move in the parking lot made me laugh, because I have done the EXACT same thing and it never works. Once that filling warms up, it basically turns into lube and the layers just skate around. Fresh fruit filling is the worst for this because the juice soaks into the cake and everything gets slippery. Overnight chill is the real fix, but not just overnight, you want at least 8 hours with something heavy on top to press it down. Then keep the whole thing cold until you leave, like straight from the fridge to the car with the AC blasting, and it should hold.
