Why does nobody talk about watching anime with the dub on mute?

I used to always watch subs and treat dubs like a sin, but last month I tried muting the English track and just reading the subtitles over it, and the pacing felt completely different. Has anyone else messed with audio tracks just to see how much the voice acting changes a scene, or is that just my weird IT brain looking for patterns?
