Referencing your "minor repairs" point, we let our apprentices handle simple jobs like tire rotations alone but check their work after. Builds confidence and catches mistakes before they leave the shop.

Heard a podcast where an A&P said letting apprentices sign off on small stuff with a quick supervisor review actually reduced repeat errors. Seems like a good middle ground.
