Crispy vs chewy wings, which side are you on?

Every wing recipe I see says 380 for 20 minutes. But my sister swears by 400 for 12 then a rest. Her wings come out chewy, mine crack when I bite. I've tested both ways 5 times this week and texture is totally different. Is the rest step actually doing something or just a myth?

Test both again but time yourself eating them instead of cooking them. Your sister's method sounds like she's making chicken-flavored taffy, honestly. I did a side-by-side last month and the crispy ones were gone in 4 minutes, the chewy ones took 20 and left me with jaw pain like I'd been chewing gum for a marathon. That rest step is just an excuse to let the butter cool into a skin you have to fight through. Stick with your crackly wings, they're the ones people actually reach for twice.
