Burned my second batch of wings before I figured out the real issue
Last Tuesday I set the air fryer to 400 for 20 minutes and walked off to answer a parts call. Came back to smoke and sad, blackened wings. Turns out my basket was packed too tight and the fan was blocked, so I did a single layer at 375 for 14 minutes and they came out perfect. Anyone else have a similar 'overcrowding' learning curve?
The "packed too tight and the fan was blocked" thing is real. I read somewhere that air fryers work more like a small convection oven than a deep fryer, so the hot air has to actually move around the food. If you stack wings or pile them up, the middle ones just steam and the outside ones burn. Some guy tested it with a single layer versus a full basket and the single layer cooked in way less time and came out crispy. So your 375 for 14 in one layer makes total sense.
