Funny how the simplest things can trip you up for so long. My buddy tried to grill a whole salmon filet with the skin on once, and it just stuck and tore apart. My old chef in Miami used to say you need a full inch between each scallop. The steam from a crowded pan makes them boil instead of sear. I wasted so much good seafood before I learned that simple rule. Now I cook them in two small batches even if it takes longer. The crust you get is totally worth the extra time.
