Two cases of romaine showed up at my back door in Houston and I had to pick one
Last Friday the distributor dropped off two cases of romaine at 6am, one fresh and green, the other a little wilty at the edges. I had 90 covers booked for a wedding that night and only room in the walk-in for one case, so I went with the wilty one since it was already paid for. Big mistake. By 4pm half of it was slime and I was sending my prep guy on a panic run to Restaurant Depot. What's your rule for deciding when to gamble on iffy product vs just eat the cost?
