Shoutout to the dish pit guy who showed me the sheet pan trick for burnt-on grease
Last Tuesday I burnt a sheet pan of bacon fat solid in the bottom oven at my spot in Cleveland, and I tried scrubbing it for 40 minutes with steel wool and got nowhere. One of the dish guys walked over, sprinkled baking soda and a splash of water on it, then flipped another pan upside down over the top and put it back in at 400 for 15 minutes. The steam lifted the whole crust off in one piece when I wiped it with a rag. Now I keep a spray bottle and a box of soda by the sink for nights like that. What's your go-to for a sheet pan that's beyond saving?
