Shoutout to my lumpy hollandaise that finally came together
I was doing brunch service and totally broke my hollandaise, like it split into a greasy mess. Idk, maybe it's just me but I was ready to start over, but I slowly whisked in a touch of hot water instead. It came back creamy and held for the whole shift, which felt huge after that panic. Small win for not wasting a whole batch, I guess.
