My old boss at the shop in Bakersfield drilled it into my head to always chill the grinder plates, and he was dead right
Back when I was an apprentice at a shop off Chester Ave, my boss would yell at me every single morning to throw the grinder plates in the freezer before we started the day. I thought it was a waste of time and just another thing he did to bust my chops, but after one brutal summer week where our grind got smeared and grey by 10am, I finally gave in and tried it. Turns out cold plates keep the fat from melting on contact, and now I want to know if anyone else swears by chilling their gear or if you all just run it at room temp.
