Wrapped my 40th brisket last weekend and realized I stopped timing the stall
I hit brisket number 40 on Saturday, a 14 pounder on my offset in Little Rock. Back at number 10 I was staring at my probe every 15 minutes waiting for the stall to break, freaking out over every degree. This time I put it on at 6am, wrapped when the bark looked right, and pulled it when it jiggled, no clock watching at all. Has anyone else noticed their cooks got way calmer once they stopped counting hours?
