My neighbor watched me pull a burnt loaf out of the oven and said something I still think about
I was pulling my third burnt loaf of banana bread out of the oven on a Tuesday night when my neighbor Deb knocked on the screen door. She looked at the black brick on the cooling rack and said, "You keep opening the door to check on it, that's why it falls." I had no idea what she meant so she stood there and explained that every time I cracked the oven open the heat dumped out and the middle never set. Next loaf I left the door shut for 55 minutes and it came out perfect. Has anyone else had someone point out something that obvious that you just could not see yourself?
