Hit my 500th loaf last week, never thought I'd get here
Started baking bread in 2018 with a burnt brick that my dog refused to eat, and now I've got a notebook with 500 entries and the last 50 loaves have all been edible, so what number finally made you feel like you actually knew what you were doing?
Laughing at that burnt brick comment because my first loaf was basically a hockey puck with a crust. I think I hit 300 before I stopped holding my breath every time I cut into one. Even now I'll have a day where the crumb is perfect and I still Google "bread dough too sticky" like it's 2018 all over again. Honestly the real milestone was when I stopped apologizing to people before they tasted it. That took way longer than 500 loaves though, probably closer to 1000.
