I mean my grandpa used bacon grease on everything so maybe we're all overthinking this.

nah but like, bacon grease is pure liquid fat with zero smoke point control. once it reaches those high temps it starts breaking down into straight carcinogens. your grandpa probably had a cast iron seasoned to hell and back but most people are just pouring it into a nonstick pan and calling it a day. that's a recipe for burnt chemical city right there.
