Freezing leftover rice in ice cube trays before air frying it changed my fried rice game
Cooked a big batch of jasmine rice on Sunday for meal prep and by Wednesday it was dry and clumpy in the fridge. I pressed it into an ice cube tray, froze it overnight, then popped the cubes straight into a 400 degree air fryer for about 8 minutes with a splash of soy sauce and frozen peas. Each cube broke apart into perfect little rice kernels with crispy edges, no mushy clumps at all. I do this every week now and it takes 10 minutes total. Has anyone tried freezing other grains like quinoa or barley this way?
Rice vinegar in the water before you cook it helps too, like a teaspoon per cup, keeps the grains from getting so sticky in the first place. For quinoa I would freeze it flat in a bag instead of trays since the grains are so small they just fall apart when you try to pop them out. Barley holds up fine in cubes though, just give it a couple extra minutes in the air fryer because it's denser.
